I'd like to model some typical cantilever brakes (Paul's, Shimano, TRP, etc.)

I don't have a faster way for now. However, if you've done it once as described at: bikecad.ca/canti_bosses, you could save that as a standard component and be able to use it on as many other bikes as you like.
